How Probiotics Are Created Through Fermentation

Fermentation is a natural process that encourages the growth of good bacteria in foods like vegetables, fruits, and superfoods. Here’s how it works in two key phases:


Phase 1: Bad Guys Die Off

Bacteria, both good and bad, naturally live on the exterior skins and leaves of ingredients used in fermentation. During the first day of our fermentation process:

  • The wild fermentation and salt environment kill off the bad bacteria.

  • Good bacteria thrive in the saltwater brine and begin to grow.

  • Lacto-fermentation starts, producing an acidic environment that favors good bacteria colonization while eliminating harmful pathogens.


Phase 2: Good Guys Abound

As fermentation continues:

  • Acid levels rise (4–6 pH), making the environment too harsh for bad bacteria.

  • Good bacteria thrive in our formula.

  • The environment becomes oxygen-free, a requirement for a successful fermentation batch.
